175 Best Instant Pot Recipes Cookbook

I had no idea that it has been so long since I’ve posted on my blog.  I’m sorry to have abandoned you the last few months.  Hopefully you have been following along on my Instagram account as I am posting photos on there on a regular basis.

Today I wanted to tell you all about one of my newest, favorite, small appliances – the Instant Pot.  You have probably have heard about it recently but might not be sure what it is.  The Instant Pot is an electric pressure cooker with other options included – like a yogurt maker, slow cooker, rice cooker, steamer and a saute pan.  I have made a few recipes with my pot and over the next month I will be showcasing some of them.  

I stumbled upon a cookbook by Marilyn Haugen called “175 Best Instant Pot Recipes” – I tried two of them already and I’m excited to give more a try.

This morning I cooked breakfast in my Instant Pot – Apple Yogurt Chia Power Breakfast.  A mixture of apples, steel cut oats, cinnamon, brown sugar, chia seeds, yogurt and walnuts (my walnuts had gone rancid so I substituted a small handful of granola).

For supper I made Orange-Glazed Pork Chops (recipe in the cookbook) and served it with some Green Beans.  There was enough of the orange sauce left over that I used some of it for the green beans.  Very flavorful.

I was offered the opportunity to try GoodBelly for their 12 day reboot.  I was actually pretty excited about it since i’ve been having some tummy troubles for the past few months.  My biggest concern was what the drink would taste like.  I was pleasantly surprised that I really enjoyed the taste.

For the first week, I enjoyed the juice straight up in a glass.  After that I started incorporating it into my morning smoothie.   They have many other flavors and I’m looking forward to trying them all.

Ingredients
  1. 8oz of GoodBelly Pomegranate Blackberry Juice
  2. 1 Scoop Vanilla Shakeology (or any other protein mix)
  3. 1 cup of frozen strawberries
Instructions
  1. Combine all ingredients into a blender and blend. Add additional GoodBelly Juice if the smoothie is too thick.

April is National Soyfoods Month

April is National Soyfoods Month.  It’s so easy to substitute some of your regular ingredients for a soy based product.  For example, substitute soy milk for dairy milk or tofu for chicken.  Soy protein is the only plant protein the FDA recognizes to reduce heart disease risk.

This really surprised me.  I’ve been using almond milk instead of cow’s milk and after reading this, I’m substituting soy milk instead.  I love getting the extra protein.

I love, love, love, edamame.  I would easily make this swap.  Steamed edamame pods sprinkled with a bit of garlic powder and salt.  Yum!

A snack higher in protein and lower in fat.  Great swap!

I decided to swap out one item in my Breakfast Scramble and include an extra one in my meal celebrating National Soyfoods Month.  Instead of using pork sausage, I used Morningstar’s soy-based sausage patties and I also included edamame, already shelled.

Breakfast Scramble (featuring Soyfoods)

MorningStar Farms Sausage Patties
Mixture of Green, Red and Yellow Peppers and onions (I buy the frozen mixture)
Hashbrown potatoes (either the shredded or diced)
Edamame (shelled)
Chili powder, salt and pepper, to taste

Microwave the MorningStar patties per the directions on the box.

Chop into a crumble.

Saute the peppers and onions in a pan on the stove. Once softened, add in the frozen hashbrowns and cook until no longer frozen. Add in the MorningStar crumbles and edamame. Sprinkle with chili powder, salt and pepper. Enjoy.

Omni Drops Day 4 – Strawberry Slushy, Omni Sliders & Cabbage and Hamburg

Today is my R1P2D4 – Day 4 on the Omni Drops Program.  I’ve lost a total of 7.8 pounds.  Yeah me!

Here’s what I ate:

Breakfast – Strawberry Slushy/Smoothie
Lunch – Cabbage and Hamburg
Snack – Granny Smith Apple
Dinner – Omni Slider Burgers with Roasted Asparagus

I also took my Omni IV liquid vitamins, Fiber ‘n More and Nite Lite.

Here’s some recipes for my meals.  I’ll be putting up another post with recipes for homemade BBQ Sauce and Ketchup.

I had some errands to run so I made a Strawberry Slushy to take with me for Breakfast, plus my large cup of water.
 
Strawberry Slushy (also called a Strawberry Smoothie)
 
5-6 Frozen Strawberries
4 ice cubes
1 cup water
1 packet of Stevia (optional)
Omni IV liquid vitamins (optional)
 
Throw it all in a blender and blend away.  That’s it.  Nice and easy.
 
 
Ohhh, my favorite
Cabbage and Hamburg
4oz ground beef
3oz cabbage, chopped
1oz onion, chopped
1 garlic clove, minced
salt and pepper
 
Saute the garlic and onion in a pan with a splash of water.  Add the hamburg and cook until it’s no longer pink.  Add in the cabbage and saute – you may need to add a bit of water to help cook the cabbage.  Add salt and pepper and you’re done.
Omni Slider Burgers
 
4oz ground beef, divided into two
seasonings you’d enjoy (I used some garlic, salt and pepper)
1 wasa cracker
a smear of homemade BBQ sauce or homemade ketchup
 
Divide the ground beef into two and make two patties. Cook in a pan until done to your likeness.  Sprinkle with your seasonings.  Break your wasa cracker in half and place the burgers on the crackers.  Top with homemade Ketchup or BBQ sauce.
 
I served my sliders with roasted asparagus.  We were watching the NFL Playoffs and it was my version of finger foods.

Breakfast Smoothies

I’m not a big breakfast eater.  I don’t like eggs and I’m not a big pastry or high carb (aka bread) person.  Right now my favorite breakfast has been making myself a smoothie.  I call them green smoothies because I usually add kale or spinach to them but many times the color of the smoothie isn’t really green.

This week’s smoothie consisted of:

1 cup almond milk
1 cup mixed berries, frozen
a banana
4 cups of kale or spinach
2-4T of flax seed or a flax seed mixture (I’ve been using Linwoods Flax, walnuts, almonds and goji berries)

Put it all in a blender and blend away.

If I’m going to have a really busy morning and lunch might run a bit late, then I’ll add in some protein powder.
