My Happy Planner and No Bake Energy Bites

I’m down 11.8 pounds on the Weight Watchers SmartPoints Plan.  I’ve hit a few bumps in the road with some illnesses and that slowed some progress down but as long as I continue to move forward, I’m not on any fast train.  Slow and steady wins the race.

I have found that planning my meals with the help of my Fitness Happy Planner has really helped.  I’d be happy to help anyone with menu planning.  Just let me know by commenting below.  I find picking one cookbook, website, Pinterest board – where ever you find healthy recipes, and use that as your guide for the week.  

I started out using just a pad of paper to jot down my meals and that worked really well for many years.  Then I was introduced to The Happy Planner by Me and My Big Ideas (sold online, Hobby Lobby and Michaels).  Since then, I’ve enjoyed jotting down my meals in there.  I created a SmartPoints tracker to add up my points at the end of each day.  This week I also added a tracker for the supplements I’m taking.  The sidebar tracker was a free printable that I printed and used a tape runner to adhere.

I also wanted to share with you a recipe for some No Bake Energy Bites.  You can really customize them to whatever your taste buds like.  Swap out the raisins for other dried fruit (I used dried cherries today).  The original recipe calls for peanut butter but I used a mixture of 1/2 peanut butter and 1/2 cashew butter.  I would bet that almond butter would be really good also.

No Bake Energy Bites

Ingredients
  1. 1 cup old-fashioned oats
  2. 1/2 cup creamy peanut butter (I used a mixture of peanut butter and cashew butter)
  3. 1/2 cup chocolate chips
  4. 1/2 cup peanuts or almonds (I used slivered almonds)
  5. 1/3 cup honey
  6. 1/3 cup raisins or dried cranberries (I used a mixture of raisins and dried cherries)
  7. 1 T chia seeds
  8. 1/2 cup chopped pretzels
Instructions
  1. Stir everything together in a bowl. Cover and refrigerate for 1-2 hours then shape into 1-inch balls. Refrigerate until ready to use. They will last 2 weeks in the refrigerator.

This Week’s Menu, Last Week’s Food & Pokemon Go!

I’m down 8 pounds in the last three weeks with Weight Watchers.  I have fallen off the track a few times but I quickly jumped right back on.  I know many people have a hard time following any type of food plan.  I really feel that planning is what helps keep me on track.  On Thursday nights while watching Big Brother, I’ve been planning my menu for the upcoming week.  Normally I grab a cookbook off from my shelf and plan my meals from the book.  Then the next week I’ll grab another one, etc.  Trying new recipes helps keep your diet switched up so it doesn’t get boring.

I’m not a big one on exercise.  I have tried many exercise programs but find I really dislike exercising.  A week ago, my 21 year old son started heading out the door in the evening to meet up with some friends.  He’s normally a home-body and it peaked my interest to find out why he was leaving the house more often than usual.  That’s when I was introduced to a game called Pokemon Go.  My 24 year old daughter is also playing the game.  I decided to download the app to see what it was all about.  Guess what happened?  I started playing it!  Two nights last week, both of my kids and myself went for walks around a few local parks to catch Pokemon.  It’s exercising without knowing it.  I get to burn some calories all while gaining experience by hatching eggs and catching Pokemon.  I’m hoping this is a trend for video game companies.  Let’s get off the couch!

Chicken Stuffed with Stuffing

Guess what happened today? I hit a BIG milestone in my weight loss journey – the big 4 – 0. Yup, I’ve lost 40 pounds so far since I started the Omni Drops Program. I am so excited. Yesterday I slipped on a pair of jeans that I bought 6 years ago and had high hopes on fitting in when I was trying to lose weight back then. You can imagine the feeling I got when I fit into them and then I wore them proudly with a big smile on my face, all day long.

Tonight I was looking for something different to eat to celebrate the big 40 and decided to try and make something to stuff inside my chicken. I went with a stuffing made out of Wasa crackers, celery, onions and spices. It was so delicious and just like an old-time homecooked meal.

stuffed chicken

 

Stuffed Chicken
(recipe is only for one so double or tripe if you need to feed more)

4oz chicken breast
1/2oz celery, chopped
1/2 oz onion, chopped
1 Wasa cracker
dash of ground thyme
dash of salt and pepper
3 Tablespoons chicken broth

Pound the chicken breast so it’s thin and place on a cookie sheet. Grind your cracker in a mini food chopper/processor and place the cracker crumbs in a bowl. Add the celery, onion and spices. Mix well. Add the broth and Place the stuffing in the middle of the chicken breast and roll the chicken closed. Secure with a toothpick. Bake in a 375 oven for 20 minutes.

Someone Played a Trick on Me

Happy Halloween.  I feel like I was handed a “trick” today at Weight Watchers.  I couldn’t wait for today to come so I could weigh in.  I was pretty sure I had hit my 10 pound mark.  My scale at home (both of them) showed a two pound loss.  Unfortunately for me, the scale at WW only showed a .2lb loss.  Yes, there is a period in front of that 2.  Hoping next week I’ll see an added bonus from this week’s loss that didn’t show up.

This morning I enjoyed my daily green smoothie.

It always feels so good to start the day off with a good portion of fruit and vegetables.
For lunch, I enjoyed some leftover soup from the last couple of days.  
Soup warms my soul.  Vermont has been chilly and today it rained so soup, with a bit of a Chipotle spice kick to it, hit the spot.
I tried out a new recipe for supper tonight.  Lentils, apples and sausage salad.  Delicious.  I’ll be posting the recipe later.

My good news for the week:  I had my A1C tested last week and the results was great.  My number went down to 6.1 (from 7.3).  I still remain in the pre-diabetic range though, hopefully it’ll improve more in the next three months.

Here’s the damage done to my arm.  Two tries to draw blood and the nurse gave up and went to get another nurse.  The second nurse hit a vein in my other hand right away.  One time when I went to the ER in intense pain, it took them 13 tries to get an IV in me.  Thanks mom and dad for providing me with small, hard to get to veins.
This weekend, I am so excited.  My sisters and a friend are coming over to my house and we’re stamping Christmas Cards.  It’s been so long since I’ve taken out my stamping things.  Hopefully I’ll get 40 cards made.
I did start listening to Christmas music this week.

I’m Sick….Help!

Last week I took a business trip to Ft. Lauderdale, FL and then over the weekend took advantage of my location and jumped on a Carnival cruise ship to the Bahamas.  What I didn’t have planned was spending all of Sunday in my cabin sleeping and trying not to get anyone else on the ship sick.  I had caught a cold virus somewhere along the way and my throat was sore, nose started running, body ached and coughing was non-stop.  It’s now Wednesday and after a trip to the doctor and ears that haven’t popped since my flight home on Monday, I’m still not feeling any better.
The doctor provided me with a nasal spray that he said might help with the tubes in my ears.  They are inflammed and they need to go down before air can pass through them to release the pressure.  I also received benzonatate for my cough.  24 hours in and I’m not any better.  My body is so sore from coughing so hard.  All of my muscles ache.  Help!!!!
I’m hoping some of you might have some natural cures that I can try.  Any tips?

Map My Walk

I saw a post on Facebook this morning where someone used an app called Map my Walk.  I decided to download it and give it a try.  I walked this morning on a recreational trail in the woods so I was a little apprehensive if it would pick everything up okay and it did great.
I only had a 1/2 hour to get a short walk in, something is better than nothing – right?

 
I did walk a bit more after hitting the stop button from recording my walk – my husband and I decided to walk around the baseball fields to take more photos of the autumn colored trees. I would estimate it only added on another .2 miles.
