Chicken and Orzo
Serves 2 (I doubled the recipe and made it for 4 but the recipe below is for 2)
Ingredients
1/2 medium onion, finely chopped
1 garlic clove, minced (I used 1/2 T of pre-minced garlic)
1 cup diced tomatoes (I chopped one fresh tomato and then added in a whole can of diced – remember I was making enough for 4)
2 tsp olive oil
1/2 tsp paprika
salt and pepper to taste
8oz boneless, skinless chicken breast, cut into 1 inch cubes
1 cup boiling water
1/2 cup dry orzo
2 Tablespoons grated Parmesan cheese
1. Preheat oven to 350.
2. In a medium size baking dish with a lid, combine the onion, garlic, tomatoes, olive oil, paprika, salt and pepper. Stir well to combine.
3. Add the chicken pieces, cover, and bake for 30 minutes, occasionally stirring.
4. Add the water and orzo, stir well, cover, and bake a further 30 minutes until the orzo is tender, stirring occasionally.
Serve sprinkled with the cheese.
