Five Spice Turkey Lettuce Wraps

Five Spice Turkey Lettuce Wraps

Weight Watchers PointsPlus 7 – Serves 4


Ingredients

1/2 cup cooked brown rice (could also use other whole grains like quinoa and bulgar)
2 tsp sesame oil
1 lb lean ground turkey (93%)
1 T minced fresh ginger
1 large red bell pepper, diced
1 8oz can water chestnuts, drained and chopped
1/2 cup reduced-sodium chicken broth
2 T hoisin sauce
1 tsp five spice powder
1/2 tsp salt
Boston Lettuce, leaves separated
1 large carrot, shredded
optional:  fresh cilantro

– Prepare brown rice according to the package.

– Heat sesame oil in pan over medium heat.  Add ground turkey and ginger; break up chunks while cooking.  Cook until the turkey is cooked through.  Stir in the cooked rice, bell pepper, water chestnuts, chicken broth, hoisin sauce, five-spice powder and salt; cook until heated through, about 1 minute.

– Spoon mixture into lettuce “cups”, top with carrots and cilantro (is using).

My daughter loves bean sprouts and we did open a can of them so she can add them to her wraps.  My husband loves things spicier so he added on Thai Chili Sauce (Sriracha).
